RUNNER BEANS WITH ALMONDS

 

675g runner beans                                                                                                         

100g butter or margarine

100g blanched almonds

Salt and pepper

 

Top and tail beans and blanch in boiling water for 2 minutes.

Drain beans and return them to pan with 75g fat.

Cover and simmer gently until cooked.

Brown the almonds in the rest of the fat and stir into the beans.

Add salt and pepper and serve immediately.
