BULGUR AND LENTIL PILAF

1 tsp olive oil
1 lge onion finely chopped
2 garlic cloves, crushed1 tsp ground coriander1 tsp ground cumin
1 tsp ground turmeric
half tsp ground allspice
225g bulgur wheat
750ml stock or water
115g mushrooms
115g brown lentils
300g sweetcorn
salt,black pepper and cayenne
Heat oil and saute onion, garlic and spices for 1 minute, stirring. Stir in bulgur wheat and cook stirring for approx 2 mins until lightly browned. Add stock or water, mushrooms and lentils. Simmer over low heat for approx 25-30 mins until bulgur wheat and lentils are tender and water absorbed. Stir in sweetcorn. Add more stock or water if needed. Season well with salt, pepper and cayenne and serve hot.
