1 large onion
1 garlic clove, crushed
500g silverbeet chopped and drained
2 free range eggs
Half tsp nutmeg
250gm Ricotta or cottage cheese
Half cup grated Parmesan cheese
Handful of pumpkin seeds
Salt and pepper
2 cups wholemeal flour
1 cup plain flour
3-4 tbsp iced water
Heat oil in pan and fry onion and garlic until softened. Whiz silverbeet and cheese in food processor until combined. Add eggs and seasoning and whiz again. Combine with onion mix by hand. Put in pastry case and sprinkle with Parmesan cheese and pumpkin seeds.
To make the pastry, place flours and chopped margarine in food processor and whiz until the mixture looks like breadcrumbs. Tip into mixing bowl and add enough water to make a firm dough. Turn onto floured surface and knead until smooth. Roll out thinly and line a 23cm flan dish.
Spread the filling evenly in the pastry case.
Bake at 200c for 45 to 50 mins.
Serve warm or cold with salad.
