Fresh Tomatoes

TOMATO SOUP

 

Made with fresh tomatoes, this is so much nicer than the `off the shelf` canned variety.

1 Onion, medium size

1 Potato, medium size

450g Tomatoes

50g Margarine

2 Garlic cloves

1 Bay leaf

30ml Tomato paste

450ml Vegetable stock

425 ml Milk

Salt and pepper to taste

Basil leaves

 

Chop onion and potato.

Quarter tomatoes.

Melt margarine and sauté onion until transparent.

Add potato, tomatoes, garlic, bay leaf tomato paste and stock.

Cover and simmer for 20 mins.

Leave to cool a little and stir in the milk.

Remove bay leaf.

Blend in a liquidiser.

Add seasoning and reheat to serving temperature.

Sprinkle with chopped basil to serve.

Serves 4-6
