Pizza with Aubergine & Red Pepper
1 Large pizza Base
1 med size aubergine, sliced
5 tbs oil
1 red pepper sliced or diced
125g Mozzarello cheese, grated
2 tbs tomato puree
1 garlic clove crushed
Fresh or dried basil, oregano or marjoram to taste
Sprinkle slices of Aubergine with salt and leave for approx 15mins to release moisture
Wipe moisture from slices.
Heat oil in pan over medium heat and add aubergine slices. Cook gently and brown both sides.
Step 2: Assemble Pizza
Spread tomato puree mixed with garlic and herbs over pizza base.
Sprinkle Cheese over, add Aubergine slices and red pepper.
Add olive slices if desired.
Cook in pre heated oven on high until base is crispy and cheese is starting to brown
