1 small onion

1 clove minced garlic                                                                              

1 slice wholemeal bread

1 free range egg

25g grated parmesan cheese

425g can mixed beans

1tsp ground cumin

1tbs basil pesto



Wholemeal breadcrumbs

1 free range egg


Process chopped onion, garlic and bread, in food processor.

Add egg, cheese, well drained beans, cumin and pesto.

Process until beans are chopped but not pureed.


With wet hands shape mixture into 8 balls.

Coat burgers with breadcrumbs, beaten egg and again with breadcrumbs.

Flatten and shape burgers.

Heat thin coating of oil in pan and cook burgers for 5 mins. each side.


Serves 4


This mixture can be made into small balls for finger food and served with chilli sauce.
