Rhubarb Crunchy Crumble

500g  Rhubarb

75g Raw brown sugar

 

225g Wholewheat breadcrumbs

125g Margarine

125g Raw brown sugar

 

125g Muesli containing nuts

 

 

Melt margarine in saucepan and stir in breadcrumbs and sugar and cook lightly until well mixed

Prepare rhubarb

Mix muesli with breadcrumb mixture

Layer rhubarb and sugar in ovenproof dish

Sprinkle Muesli and breadcrumb mixture over fruit

Press mixture down lightly

 

Put into centre of oven and bake at 190C for 15mins.

Reduce temperature to 175C for further 25mins. or until top is lightly browned

 

Serve with Yogurt, sour cream or custard
