FEIJOA FARMHOUSE CAKE
1 cup raisins
90ml feijoa wine or cider
3 cups peeled and diced feijoas
I cup peeled and diced apple
250 vegetable oil
2 free range eggs
450g sugar
360g flour
Half tsp salt
2 rounded tsp baking soda
2 tsp ground cinnamon
1 tsp ground nutmeg
Qtr. tsp ground cloves
100g chopped walnuts
Icing sugar to dust top.
Put raisins into a bowl and pour feijoa wine over.
Add feijoa and apple and set aside stirring occasionally.
In a separate bowl beat together the oil, eggs and sugar.
Sift dry ingredients into another bowl.
Stir half flour mixture into the egg mixture.
Stir remaining flour and walnuts into the fruit.
Gently combine the two mixtures.
Spoon the mixture into a well buttered and lined 25cm square tin.
Bake at 175C for 60-65 mins.
Serve warm or cold.
Dust top with icing sugar.
Serve with whipped cream or yoghurt.
Serves 16 as a dessert
