BROWN RICE SALAD
3 spring onions,
1 red pepper, cored, seeded and finely chopped
50g cashew nuts, roasted and chopped
2 tbs chopped parsley
6 tbs soy sauce dressing.
Cook rice in boiling salted water until tender. (approx.40mins)
Rinse, drain well and cool.
Place in bowl and add the remaining ingredients.
Toss thoroughly before serving Serves 6
SOY SAUCE DRESSING
175ml olive oil
4tbs soy sauce
2tbs lemon juice
1 clove garlic, crushed
1cm piece root ginger, finely chopped
Salt and pepper
Put all ingredients in a screw-topped jar. Add salt and pepper to taste and shake well and add desired amount to salad. Makes 300ml
